Ingredients:
6 Roma Tomatoes - chunk cut
Fennel - 2 bulbs, outer leaves removed
Onion - yellow or white, sliced or chopped
Garlic - 10 cloves chopped
Olive Oil - approximately 2 tbsp
Lovebyrds Seasonings Amore Italian - 2 tbsp
Smoked Salt - 2 tsp
Your favorite vinegar
Chop all ingredients roughly
Heat up a skillet to medium temp
add 1 tbsp Olive oil
Add fennel, onion and garlic
Sprinkle with 1/2 tsp salt
Sautee until all tender. I like a little char to form
Add tomatoes, remaining olive oil and Amore Italian. Stir together and simmer for 20 minutes covered. Use your immersion blender to make a chunky sauce. Add remaining salt to taste and 1 tbsp of your favorite vinegar. Continue to simmer for an additional 20 minutes.
